Small batches - big flavours

Real tradition, taken slowly.

Once a week, we bake Tallinn's most authentic Croissants and Baguettes, using my Grandfather's recipes, my old sourdough starter, freshly-milled organic flour and butter you’d want to eat with a spoon.

A message from François

Memories and savoir-faire

I want to make you experience my childhood: a warm slice of my grandfather's bread as it comes out of his wood-fired oven; the buttery hug of a croissant on a Sunday morning; a madeleine dunked in café au lait while trying not to ruin my grandma's tablecloth.

In a world that keeps going faster, I'd like to take you back to a place where time stops. Where a know-how passed down through generations - since my grandfather's hands first guided mine to shape a loaf - becomes a promise to never take a shortcut. To respect the dough, give it time, and use natural, healthier ingredients.

At its heart, bread is for sharing: 'companion' literally means those who share bread. I hope I get to share my passion with you. See you at the bakery.
