The “palmier” is an old classic probably inspired by the palm trees of North Africa during the French colonial era. It was the favourite special treat of children a century ago. The caramelised pastry is full of butter and, in my interpretation of it, brushed with a homemade saffron syrup, as a tribute to its origins. The simplicity of the palmier is its beauty – the crunch is irresistible, the butter shines through, and the saffron gives it a little extra that doesn’t get in the way.
