  • “Cobblestone” bread with organic stoneground wheat

  • Sweet, nutty flavour with a hint of sourness

“Pavé” means cobblestone in French, a common name for flatter, rectangular breads reminiscent of the cobbled streets of an old town. The dough is similar to the baguette, but the dried fruits give it bites of sweetness, and the hazelnuts a lovely crunchiness.

♥ Can be eaten on its own, with butter, or paired with medium/strong cheeses, terrines and pâtés.

Notes

All my flour is organic/öko, stoneground so it keeps the germ and some of the bran in it
for better health properties.
The amount of yeast in this bread is minimal (<1g per loaf!):
it helps control the sourness from the sourdough for a more balanced taste,
while still allowing all the health benefits of sourdough and long, 24h fermentations.

Lactose free.
Suitable for vegans.
